Ramen is a noodle dish originating from China. The noodles are made from wheat and served in a large bowl with accompaniments such as char siu, bamboo shoots, medium-boiled egg or some types of seaweed. Soy sauce or miso are the most popular types of broth, making the noodles a lot more deletable. There are many different types of ramen, and each region often has its own unique type of ramen.
Udon is a type of Japanese noodle dish with noodles made from wheat and has a thick texture. Usually, this dish is served hot in a simple style (kake udon: only broth and nothing else) or flavored kaketsuyu broth style. Kaketsuyu is a combination of dashi broth, soy sauce and mirin. A few side dishes are also added such as tempura, chopped onions, seaweed and boiled eggs. In each region, there is a different way to serve udon; cold regions like Hokkaido often use more soy sauce and oily broth to warm their bodies.
Yakisoba is also made from buckwheat flour. It originated in China and became popular in Japan. Yakisoba is served after it is stir-fried with meat and vegetables, and garnished with red ginger. You can easily find this noodle dish at Japanese festivals.
